Born from a passion for Old World Neapolitan and Roman hearth traditions, Fuoco Antico brings 100% wood-fired artisan pizza and hand-crafted stuffed pasta to the heart of Green Bay.

Every dough batch is naturally cold-fermented for 72 hours using high-protein Italian flour, pure Wisconsin water, and sea salt—giving our crust its signature blistered leopard char, airy honeycomb cornicione, and deep flavor.

Our custom brick hearth burns seasoned local hardwood at over 850°F, firing each pizza in 90 seconds so San Marzano tomatoes, fresh fior di latte mozzarella, and locally sourced seasonal produce retain their vibrant character.
